White Chocolate Cranberry Bars




I love desserts and snacks that you can whip together and throw in the oven really quickly.  I find that dessert bars are by far one of the easiest treats because they pretty much just consist of mixing the ingredients in a bowl, pouring it into a pan and baking.  This recipe is no different.

Here's what you'll need:

2 1/4 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2/3 cup brown sugar
1/2 cup sugar
1 stick butter (softened)
2 eggs
2 tsp vanilla
1 cup dried cranberries
1 cup chopped walnuts
1 1/2 cup white chocolate

1.  Heat the oven to 350 degrees Fahrenheit.  Grease (quite heavily) a 13 x 9 in pan with cooking spray or butter.
2.  In a large bowl, combine the dry ingredients (flour, baking powder, baking soda, and salt.)
3.   In another large bowl, mix together the sugars and the stick of butter.  Add each of the eggs one at a time, followed by the vanilla, and beat until completely blended.  Add in the flour mixture a bit at a time, making sure to mix thoroughly.  Fold in the cranberries, walnuts and white chocolate.
4.  Once everything is folded in and all the ingredients are blended evenly, pour the mixture into the prepared batter.  Spread it out evenly and pop it in the oven for about 35 minutes.  Your bars should be a nice golden brown color at this point.
5.  Let the bars cool before flipping them out of the pan.  Cut them into squares however large or small you like.  And that's it!

This is a pretty basic batter so you can add any ingredients you'd like, such as mini marshmallows, milk chocolate chips or caramel chips!
